An attractive, inviting sweet, gentle peat smoke greeted the Panel and the aromas created a picture of a barbeque on the beach. It is mainly seafood; king prawns, langoustines, oysters in a creamy cheese sauce and grilled Rosemary tuna steaks. To taste it was an explosion of sweet peat smoke and on the grill we now also found chargrilled aubergines seasoned with fennel and cardamom. Water added to the barbeque theme with smoked trout and mackerels both in a lemon and black pepper dressing. The flavour was now pipe tobacco, caramel toffee, peat smoke infused dark chocolate and in the finish an Aniseed Fisherman’s Friend lozenge.
