The aromas were all over the place; smoky bacon crisps, soy sauce, Chinese plum wine, venison steak with a red wine reduction but at the same time new plimsolls, old engine oil and a puff of soot. Let’s give it a try; big, dirty, oily, salty but also an underlying sweetness – honey roasted parsnips and carrots. With water a Picture evolved of a beekeeper based on the seashore using a smoker fuelled with pine needles to calm the bees – it certainly worked on us. The taste was now that of a honey baked ham with glazed cinnamon apple rings and minty new potatoes.
